Risotto razowe z suszonymi grzybami - Dried mushroom (boletus) risotto - Risotto integrale ai funghi porcini

Składniki/Ingredients/Ingredienti:
250 g ryżu integralnego (brązowego) / 9 oz brown rice g / 250 g di  riso integrale
garść suszonych grzybów/ a handful dried mushrooms (boletus)/ 40-50 g di funghi porcini secchi
1 cebula/ 1 onion/ 1 cipolla
masło lub oliwa/ butter or olive oil/ burro o olio di oliva
1 litr rosołu/ 1 litre broth/ 1 litro di brodo
parmezan/ Parmesan/ parmigiano q.b.
1/2 szklanki czerwonego wina/  1/2 cup red wine/  1 bicchiere di vino rosso

Wykonanie:  Risotto wykonujemy podobnie jak risotto z szafranem, tzn. na głębokiej patelni podsmażamy cebulę na maśle ew. oliwie/oleju, namoczone uprzednio grzyby kroimy na drobniejsze części, dodajemy je do cebuli, dolewamy wina i wsypujemy ryż, podlewając systematycznie rosołem, lub rosołem z wodą.

Pod koniec długiego gotowania (ryż integralny dość długo się gotuje) nie trzeba dolewać szafranu - jak w przypadku risotta z szafranem, ale można, wtedy danie staje się bardziej wyrafinowane, pieprzymy do smaku. Podajemy z tartym parmezanem lub innym serem.

Directions: We cook the risotto following the Italian recipe of the saffron risotto and serve with grated cheese.  We put the dried mushrooms into water for a while until they are softer and we can cut them into smaller pieces. Together with the onions, however, we fry dried mushrooms for a short while and then we add the wine and broth. Obviously, we don't need to add the saffron as the mushrooms contribute to the taste and colour of the dish.

We need to be aware that brown rise needs more time to cook than white rise. Thanks to it, however, the dried mushrooms have enough time to cook well until they are soft.

Come si fa: Facciamo il risotto seguendo la ricetta del risotto allo zafferano. Mettiamo i funghi sotto l'acqua per circa 15 minuti così si tagliano a pezzi più piccoli molto più facilmente. Assieme alla cipolla, mettiamo i porcini secchi tagliati a pezzi. Alla fine della cottura non aggiungiamo lo zafferano, ma comunque chi vuole può farlo. Il riso integrale si cuoce molto più a lungo del riso bianco, ma questo è molto buono perché c'è abbastanza tempo per i funghi a cuocersi per bene.
